Beer Fish is by far the most famous local dish in Yangshuo. If served in the original way, it should feature river carp caught nearby in the Li River. The fish is braised in a sauce that includes a bottle of the local Liquan beer as well as soy sauce and other spices. Simmering in this sauce, the fish is served covered with fresh cilantro, onions and bell peppers. The fish flavour is very mild and supports the fragrant “beer” sauce and fresh vegetables very nicely....
